I had been one a lookout for a good kasoundi recipe ever since I tried Babka's kasoundi in Melbourne. This is by far the best I've come across, it is definitely a keeper. My dear friend Fion obtained this recipe from Kyneton Ridge Estate, thanks Fion!


Kasoundi, recipe adapted from Kyneton Ridge Estate

Ingredients:
 
Fresh ginger: 250 grams, grated

Fresh garlic: 125 grams, peeled

Fresh green chillies: 70 grams, seeds removed


Malt vinegar: 500 ml divided into two portions of 150 ml and 350 ml

More Andrea Nguyen's dumplings: Nepalese Spiced Lamb Dumplings

I made these dumplings at the same time I made the pork and Napa cabbage ones. I do not recommend making more than one type of dumpling at a time, on your own. Very typical of me, I doubled each recipe and ended up making 128 dumplings for 4 adults. Yes, I do over-cater and it's a bad habit, I know, but I do not enjoy the look of friends hankering for more food at the end of a meal...although it is only slightly worse than friends who beg for mercy and ask you to stop when you bring out the ...
