This is the way I like to roast stew pork or lamb. This dish is both a roast and a stew since the meat roasts in the oven. This helps the crust develop a caramelised crust and flavour. It is also a stew because most of the meat cooks submerged in abundant beer and coriander in order to infuse it with flavour and help it tenderise. Seven-Hour Leg of Lamb with Wine and Herbs

This is a recipe that I had been thinking about for a while. The work is minimal and it is very delicious. I would use lamb shoulder next time as the only aspect about this dish with which we weren't happy was the texture. Despite using a very fatty organic leg of lamb free from trimming we ended up with meat that was a bit dry.
